Easy Chicken Fajitas

Want a tasty and simple dinner that you can toss in your slow cooker?

These Crockpot chicken fajitas are incredibly easy to make. Cooking them in the slow cooker results in tender and flavorful chicken. With a twenty-minute prep time, they’re quick and versatile – you can serve them in lettuce wraps or as a rice bowl if you don’t have tortilla shells.

This method is also ideal for busy weeknights when you need a fuss-free dinner option.  This simplified recipe eliminates the need to marinate and sauté veggies and chicken in batches. Instead, the slow cooker takes care of everything, leaving you with minimal effort. Toss everything into the crockpot and let it do the work for you.

Cooking the fajitas in the slow cooker allows the flavors to meld together and ensures perfectly tender chicken every time. It’s a delicious, family-friendly meal that makes plenty of leftovers for lunch the next day.


Ingredients

  • 4 boneless skinless chicken breasts
  • 4 slices, red onion
  • 1 red pepper, sliced
  • 2 packets Taco Seasoning mix
  • 1 green pepper, sliced
  • 1 Cup Mexican-style shredded cheese
  • Salsa for topping
  • Soft tortilla shells

Directions

  1. Place boneless chicken breast and one packet of taco seasoning, and 1 cup of water in the crock pot.
  2. Simmer for at least 5 hours.
  3. Drain all but 1/4 cup of water, take the chicken out and shred it.
  4. Sprinkle with the second taco seasoning mix (or Fajita seasoning) and put it back in the crock pot to keep warm.
  5. Sauté vegetables in olive or canola oil—optional: add a little of the Taco or Fajita seasoning on vegetables.
  6. Assemble fajitas with the peppers, onions, and cheese.
